The Spelta bakery was opened in 2022 by chef Illia Siomin and Olha Hrynchuk. The venue operates as both a bistro and a bread workshop. It combines Ukrainian traditions with classic baking techniques from the U.S., Belgium, and France.
A classic croissant at Spelta costs 99 UAH. It contains 35% farm-produced butter and 10% whole spelt flour. The dough is made using the Italian sourdough lievito madre, which gives the pastry a signature tangy flavor. Thanks to high-temperature baking, the crust has a caramelized tone.
The menu also includes a breakfast croissant with whipped butter and seasonal marmalade — for example, made from quince or cranberries.
In May 2025, Spelta opened its second location — near the Golden Gate, on Velyka Zhytomyrska Street.
